Programing the UV-5R using CHIRP

I have downloaded the CHIRP Software to program my newly acquired Bofeng
UV-5R. After a couple of false starts, I think its a great program(I will Donate!).
My question is: How can I prevent the radio from transmitting on certain channels IE: police or fire. Thanks in advance…

Set duplex to “off”

Got 3 of the Baofengs, just seems to me there must be a better way to program. I do have the transfer cable and driver CD, will I have to download a whole bunch of files, got an address for a simple easy Chirp download? Any help would be appreciated. As you can tell I’m new to Baofengs and no good with computers.
